These open veggie burgers filled with field mushrooms and haloumi have a complex flavour and teeth-sinkingly good texture that wouldn't go amiss even on steak night.

Ingredients
2 tbs olive oil
4 large field mushrooms
180g haloumi cheese, sliced lengthways
2 bread rolls, halved
100g baby spinach leaves
120 g chargrilled capsicum
1/2 red onion, sliced
1 pouch Bare Bones® Mushroom Sauce with Truffle
Method
Pour olive oil into a large fry pan over medium/high heat for 1 minute. Add mushrooms and haloumi cheese, cooking for 4-5 minutes each side. Remove from heat, cover and set aside.
Dress bread rolls with baby spinach leaves, chargrilled capsicums, red onion, mushroom and haloumi.
Warm Bare Bones® Mushroom sauce with Truffle as per packet instructions and drizzle over burger.
